Why an Eggless and Diary-Free Approach
We dedicate this page to educate people why eggless and vegan cakes are the way to go. There could be just one reason to buy a cake – to celebrate your love for someone. However there could be many reasons why you should opt for an eggless/ vegan cake.
The next time you purchase any food product, make an effort to take a look at the ingredients. You will realised that many, if not most products contain eggs and milk. In fact, it is really not easy to find products that are egg free or diary free.
In fact, it is difficult to find bread that does not contain eggs. Most bakery put eggs into dough to help make the bread soft. Good bread does not contain eggs. If you happen to have the chance to visit a high-end bakery shop, you will see egg is not an ingredient for bread. Eggs are really included for an added perception of value (probably). The shocking truth about eggs might let you reconsider why you should stop eating eggs.
What about milk? Is it necessary in bread and cakes? Milk is not required for bread. However cream frosting on cakes are commonly made of milk and butter. It is also the cream that makes this round sponge coated food so attractive to many. But studies have shown that milk is not necessary good for us. Types of Vegetarian
There are many types of vegetarians. The westerns understands there are four types of vegetarians:
- Lacto-ovo-vegetarians eat plant-based foods, dairy products, and eggs, and exclude meat, poultry, and fish.
- Lacto-vegetarians eat plant-based foods and dairy products, and exclude meat, poultry, fish, and eggs.
- Ovo-vegetarians eat plant-based foods and eggs, and exclude meat, poultry, fish, and dairy products.
- Pesco-vegetarians eat a vegetarian diet but also include fish, eggs and diary. Also known as Pescatarians.
However, Asians have a slight variance in defining vegetarians. This is largely due to its association with religious practice:
- Egg-vegetarians (蛋素) eat plant-based foods (except allium vegetables), milk & milk derivatives and eggs, and exclude meat, poultry, and fish.
- Milk-vegetarians (奶素) eat plant-based foods (except allium vegetables) and milk & milk derivatives and exclude meat, poultry, fish and eggs.
- Pure-vegetarians (纯素) eat plant-based foods (except allium vegetables) and exclude meat, poultry, fish, eggs and milk & milk derivatives.
A vegan is considered a strict vegetarian. Generally, vegans eat plant-based foods and exclude meat, poultry, fish, eggs and diary products. However, there are also various levels of vegans. This is because veganism is also considered a movement for prevention of cruelty to animals. A vegan that includes honey in their diet can be known as a Beegan. Very strict vegans do not confine to only diet but also the use of leather products or animal related products in their daily lives such as leather shoes, wallets or daily care items that test on animals.
Being a 100% vegan is may not be feasible as you may have to take car where the seats are made of leather. Therefore it is the activism movement that we want to promote. To raise the conscious efforts in the choices we make that can have an impact in the world that we live in.
In conclusion, choosing to go eggless and vegan means you have made a conscious effort in making a little difference to the animals. And this in turn, helps to fight climate change which is a world’s issue now.
How we do it at Dude’s Bakery
When we talked to some friends, they are curious how we are able to bake cakes without the use of eggs. The next question is: Does it taste like a cake? We often ends up laughing asking how a cake should taste like. “What about milk? How can you have that creamy texture without the use of milk and butter?” is another common question.
Let us answer the question of milk-free cream. In general, there are 4 ways of making diary-free cream:
- Soy Beans
- Cashew Nuts
- Coconut
- Chickpeas

Eggs are commonly used in cakes not just because of the taste. In fact, too much eggs in a cake causes the cake to taste eggy which most people do not like. To make a delicious cake, we choose to use great ingredients. The quality of flour, sugar, vanilla all play a part in making a delicious cake. Many customers who are not aware of an eggless/ vegan cake and tried our cakes for the first time commented that they could never have imagined cake can so tasteful and delicious without the use of eggs and milk.
Join The Movement
Life is full of choices. Sometime we made our choices because of circumstances. We believe in making conscious choices. We know that climate change is real. We know that viruses outbreak over the past decades are all due to consumption of meat. Be it the bird flu, swine flu, SARS, MERS or the recent Wuhan 2019-nCoV, they all started because of meat consumption.
The one reason to buy a birthday cake could be to celebrate an occasion. However let us give you 3 reasons why you should choose an eggless vegan cake:
- Moral factor – egg-laying chickens and dairy cows lead unnecessarily miserable and brief lives in factory-farmed conditions.
- Environmental factor – Animal agriculture requires vast amounts of land and water to support livestock and grow feed. Livestock produce 18 percent of worldwide greenhouse gas emissions; that alone is more than transport!
- Health factor – Reduced risks of cancer, cardiovascular disease and diabetes. Improved mood and healthier skin.
